Delightful and colorful cake bars combining rich cocoa flavors with a fluffy pink coconut frosting.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • Food coloring (pink)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Combine the flour, cocoa powder, baking powder, and salt in a bowl.
  3. Cream the softened butter and granulated sugar until creamy.
  4. Add the eggs and vanilla extract to the butter mixture and mix well.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow the cake to cool completely in the pan.
  9. Create the frosting by mixing shredded coconut, powdered sugar, milk, and a few drops of pink food coloring.
  10. Frost the cooled cake with the pink coconut mixture.
  11. Cut into bars and serve.

Notes

Store bars in an airtight container in the fridge for up to five days. They can also be frozen for up to a month with parchment paper between layers.
