A delicious twist on classic avocado toast featuring creamy avocado, poached eggs, crumbled feta, and a dash of chili flakes.

Ingredients

  • Sourdough bread
  • Avocado
  • Poached eggs
  • Feta cheese
  • Cherry tomatoes
  • Chili flakes

Instructions

  1. Toast the sourdough bread until golden brown.
  2. Mash the avocado in a bowl and sprinkle with salt.
  3. Poach the eggs in simmering water until the whites are set.
  4. Assemble the toast by spreading the mashed avocado over the bread.
  5. Top with poached eggs using a slotted spoon.
  6. Crumble feta cheese over the eggs and avocado.
  7. Add halved cherry tomatoes on the side.
  8. Sprinkle with chili flakes to taste.
  9. Serve immediately and enjoy!

Notes

For freshness, consume immediately. Leftover avocado can be stored with lemon juice to prevent browning.
