  • 1.5 pound pork tenderloin
  • 1 cup applesauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 small onion, diced
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the pork tenderloin dry and season all over with salt and pepper.
  3. Heat the olive oil in an ovenproof skillet over medium-high heat. Sear the pork on all sides until golden brown, about 2 minutes per side.
  4. Reduce heat to medium, add the diced onion and minced garlic to the skillet, and sauté until translucent, about 3 minutes.
  5. Stir in the applesauce, Dijon mustard, and fresh thyme, scraping up any browned bits from the pan.
  6. Return the pork to the skillet, spooning some sauce over the top.
  7. Transfer the skillet to the oven and roast until the pork reaches an internal temperature of 145°F (63°C), about 20 to 25 minutes.
  8. Remove the pork from the oven and let it rest for 5 to 10 minutes before slicing.
  9. Slice the pork, spoon extra sauce from the pan over the top, and serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze the sliced pork tenderloin with sauce for up to 3 months.
