Delightfully healthy muffins packed with protein from cottage cheese and bursting with fresh blueberries.

Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup oats
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the cottage cheese, eggs, honey, and vanilla in a mixing bowl.
  3. Mix the oats, whole wheat flour, baking powder, and salt in another bowl.
  4. Add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the fresh blueberries gently.
  6. Divide the batter evenly among the muffin cups, filling them about two-thirds full.
  7. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.

Notes

For a thicker muffin, chill the batter in the fridge for 30 minutes before baking.
