  • 1 cup cottage cheese
  • 2 cups blueberries
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 lemon (juice and zest)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish to ensure your breakfast bake comes out effortlessly.
  2. Combine oats, cottage cheese, eggs, honey or maple syrup, lemon juice, lemon zest, vanilla extract, baking powder, and a pinch of salt in a large bowl. Mix until well combined.
