Pulled Pork Stuffed Sweet Potatoes

Delicious sweet potatoes stuffed with rich pulled pork, barbecue sauce, cheddar cheese, and topped with sour cream and green onions.

Ingredients

  • 4 medium sweet potatoes (about 2 pounds)
  • 1 pound pulled pork (cooked and shredded)
  • 1 cup barbecue sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly under running water.
  3. Pierce each potato several times with a fork.
  4. Place the potatoes on a baking sheet lined with aluminum foil.
  5. Bake for about 45-60 minutes until tender.
  6. Heat the pulled pork with barbecue sauce on low for about 30 minutes or in an Instant Pot for 10 minutes.
  7. Remove the sweet potatoes from the oven and let cool slightly.
  8. Cut a slit down the center of each potato and fluff the insides.
  9. Spoon the pulled pork mixture into each potato.
  10. Top with shredded cheddar cheese, sour cream, and green onions.
  11. Serve immediately and enjoy!

Notes

Experiment with different barbecue sauces for unique flavors. Store leftovers in an airtight container for up to 3 days.
