A comforting Pumpkin Cobbler that captures the essence of autumn in every bite with rich, spiced flavors and a gooey caramel layer underneath.

Ingredients

  • 1 ½ cups pumpkin purée
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ cup milk
  • ½ cup unsalted butter, melted
  • 1 cup brown sugar
  • 1 cup water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the pumpkin purée, granulated sugar, vanilla extract, and eggs in a large bowl.
  3. Spice it up with cinnamon, nutmeg, ginger, cloves, and salt.
  4. Prepare the dry ingredients by whisking together the flour and baking powder, then add to the pumpkin mixture alternating with milk.
  5. Butter the bottom of a greased 9×13 inch baking dish with melted unsalted butter.
  6. Layer the pumpkin batter over the melted butter without stirring.
  7. Create the sugar layer by mixing brown sugar and water, and drizzling over the pumpkin batter.
  8. Bake in the oven for 40-45 minutes or until set and golden brown.
  9. Let the cobbler cool slightly before serving.

Notes

For added depth, mix in a splash of maple syrup or experiment with chocolate chips or nuts.
