A delightful mix of flavors with feta cheese, mozzarella, and spinach wrapped in a crispy tortilla.

Ingredients

  • Fresh Spinach
  • Feta Cheese
  • Mozzarella Cheese
  • Flour Tortillas
  • Sun-Dried Tomatoes
  • Kalamata Olives
  • Garlic
  • Oregano
  • Olive Oil

Instructions

  1. Prepare your filling ingredients: wash fresh spinach, chop sun-dried tomatoes, slice Kalamata olives, and mince garlic.
  2. Sauté the spinach: heat olive oil in a skillet, add garlic and sauté for 30 seconds, then add spinach until wilted.
  3. Combine the filling: mix spinach, feta, mozzarella, tomatoes, olives, and oregano in a bowl.
  4. Assemble the quesadillas: spread filling on one half of a tortilla, leaving a border.
  5. Cook the quesadillas: grill in a skillet until golden brown and crispy.
  6. Repeat the process with remaining tortillas and filling, slice and serve warm.

Notes

Serve with tzatziki or hummus for dipping. Can be stored in the refrigerator for up to three days.
