These raspberry crumb bars feature a buttery crust paired with a tangy raspberry filling for a delightful treat that’s perfect for any occasion.

  • 2 cups fresh or frozen raspberries
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cold unsalted butter, cut into small pieces
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Combine the all-purpose flour, granulated sugar, brown sugar, rolled oats, baking powder, and salt in a large mixing bowl. Whisk to ensure everything is evenly distributed.
  3. Add the cold, cubed unsalted butter to the dry ingredients and work it into the mixture until it resembles coarse crumbs.
  4. Press about two-thirds of this crumb mixture evenly into the bottom of your prepared baking pan.
  5. In a separate bowl, combine the raspberries, granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract until the raspberries are well coated.
  6. Spoon the raspberry filling evenly over the pressed crumb crust in the baking pan.
  7. Crumble the remaining one-third of the crumb mixture over the raspberry filling.
  8. Bake for 40-50 minutes, until the crumb topping is golden brown and bubbly.
  9. Remove from the oven and cool completely on a wire rack.
  10. Lift out using the parchment paper overhang and slice into 12-16 squares.
