Deliciously soft and chewy Red Velvet Cookie Bars topped with creamy frosting, perfect for any gathering.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup white chocolate chips or chocolate chips (optional)
  • For the frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 24 tablespoons heavy cream or milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream the softened butter and sugar together until light and fluffy.
  3. Add the eggs, red food coloring, and vanilla extract, mixing until fully combined.
  4. Combine flour, cocoa powder, baking soda, and salt in another bowl.
  5. Merge the dry ingredients with the wet mixture and mix until just combined.
  6. Fold in the chocolate chips if using.
  7. Spread the batter evenly in the prepared baking pan.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the bars to cool completely before frosting.
  10. Beat the softened butter until creamy for the frosting.
  11. Add powdered sugar and vanilla extract, mixing until smooth.
  12. Add heavy cream or milk until you reach your desired consistency.
  13. Frost the cooled cookie bars and sprinkle with red velvet crumbs.
  14. Cut into squares and serve.

Notes

Store any leftover cookie bars in an airtight container at room temperature for up to 3 days. Can be refrigerated for up to a week.
