  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cocoa powder
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • Cream cheese frosting for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Sift together the flour, sugar, baking soda, cocoa powder, and salt.
  3. Mix together the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
  4. Combine the dry ingredients with the wet ingredients, mixing until just combined.
  5. Fill the cupcake liners about 2/3 full with batter.
  6. Bake for 20-22 minutes or until a toothpick comes out clean.
  7. Cool before frosting with cream cheese frosting.

Notes

Store leftover cupcakes in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
