  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup strawberries, sliced
  • 1/2 cup powdered sugar
  • 1 tablespoon gelatin
  • 1/4 cup water
  • Chocolate shavings or additional strawberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a springform pan by greasing it lightly.
  2. Create the crust by mixing the red velvet cake crumbs with melted butter until combined, then press firmly into the bottom of the pan.
  3. Beat together the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. Whip the heavy cream in a separate bowl until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture.
  6. Dissolve the gelatin in water before adding it to the cream cheese mixture.
  7. Carefully fold in the sliced strawberries.
  8. Pour the cheesecake mixture over the crust and smooth the top with a spatula.
  9. Refrigerate for at least 4 hours until set.
