Creamy and rich, these Roasted Garlic Mashed Potatoes are infused with sweet, nutty goodness from roasted garlic, making them the perfect side dish.

Ingredients

  • 2 pounds of potatoes
  • 1 bulb of garlic
  • 4 tablespoons of butter
  • 1/2 cup of milk
  • Salt and pepper to taste
  • Chives for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the garlic by cutting the top off the bulb, drizzling with olive oil, wrapping in foil, and placing in the oven for about 30-35 minutes.
  3. Chop and peel the potatoes into chunks, then boil in salted water until tender, about 15-20 minutes.
  4. Drain the potatoes and return them to the pot.
  5. Squeeze the roasted garlic cloves out and add them to the potatoes.
  6. Add the butter and milk, then mash until creamy.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with chives if desired.

Notes

For a rustic texture, use a potato masher. For ultra-smooth potatoes, use a hand mixer. Adjust seasoning to preference.
