A heartwarming Roasted Garlic Tomato Soup that blends ripe tomatoes with the rich flavor of roasted garlic for a delicious, creamy experience.

Ingredients

  • 2 cups ripe tomatoes, chopped
  • 1 head garlic
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the top off the head of garlic, drizzle with olive oil, and wrap in foil. Roast for 30-35 minutes until soft and aromatic.
  3. Heat 1 tablespoon of olive oil in a pot over medium heat. Add the chopped onion and sauté until translucent.
  4. Stir in the chopped tomatoes and cook for another 5 minutes.
  5. Remove the roasted garlic from the oven and squeeze the cloves into the pot.
  6. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 15 minutes.
  7. Puree the soup with an immersion blender until smooth.
  8. Stir in the heavy cream, and season with salt and pepper to taste.
  9. Serve the soup hot, garnished with fresh basil.
