A delicious no-bake treat combining creamy cheesecake, crunchy pretzels, and gooey caramel, all covered in chocolate.

Ingredients

  • 16 ounces Cream Cheese (softened to room temperature)
  • 1 cup Powdered Sugar (sifted)
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Fine Sea Salt
  • 30 Soft Caramels (unwrapped)
  • 2 tablespoons Heavy Cream
  • 2 cups Pretzels (finely crushed)
  • 12 ounces Semi-Sweet Chocolate Chips
  • 1 tablespoon Coconut Oil or Vegetable Shortening
  • Flaky Sea Salt (for sprinkling)

Instructions

  1. Cream the cream cheese in a mixing bowl until smooth.
  2. Combine the powdered sugar, vanilla extract, and sea salt.
  3. Chill the mixture for at least 2 hours.
  4. Portion the mixture using a cookie scoop and roll into balls.
  5. Create an indent in each ball and add a caramel.
  6. Freeze the balls for at least 30 minutes.
  7. Prep the crushed pretzels and melt the chocolate with coconut oil.
  8. Drench each ball in melted chocolate.
  9. Coat the balls in crushed pretzels.
  10. Set them back on the baking sheet and sprinkle with sea salt.
  11. Chill for another 30 minutes to set the chocolate.

Notes

Store any leftovers in an airtight container in the refrigerator for up to one week. Can freeze for up to three months.
