Chewy and glossy cookies infused with honey and a hint of vanilla, topped with flaky sea salt.

  • 1/2 cup unsalted butter (melted and slightly cooled)
  • 1/4 cup pure honey
  • 1/2 cup dark brown sugar (packed tightly)
  • 1/2 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour (spooned and leveled)
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tbsp flaky sea salt (for garnish)

Instructions

  1. Melt the butter until it’s just about to begin bubbling. Let it cool slightly.
  2. Mix the melted butter, honey, dark brown sugar, and granulated sugar together until smooth and glossy.
  3. Incorporate the large egg and vanilla extract, mixing until fully combined.
  4. Combine the flour, baking soda, and kosher salt in a separate bowl.
  5. Merge the dry mixture with the wet ingredients until no flour streaks remain.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Scoop dough onto the sheets, spacing them apart, and sprinkle with flaky sea salt.
  9. Bake for about 10 minutes until edges are golden and centers look slightly underbaked.
  10. Cool on a wire rack before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze dough for up to 3 months.
