Sausage Peppers Skillet

A flavorful and comforting dish featuring Italian sausage, vibrant bell peppers, and a blend of seasonings that brings families together around the dinner table.

  • 1.5 lbs Italian sausage links (sweet or hot)
  • 2 red bell peppers, sliced
  • 1 yellow bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 large onion, sliced into wedges
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp red chili flakes
  • 1/2 cup crushed tomatoes
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large cast iron skillet over medium-high heat. Add the Italian sausage links whole and sear on all sides for 5-6 minutes until they’re golden brown. Remove them from the skillet to rest, then slice into round pieces.
  2. In the same skillet, with the delicious sausage drippings, cook the sliced onion wedges over medium heat for 6-8 minutes until they turn golden and jammy.
  3. Next, add the sliced red, yellow, and orange bell peppers to the skillet with the onions. Cook over medium-high heat for about 4-5 minutes until they are tender.
  4. Push the vegetables aside so there’s a space in the center of the skillet. Add the minced garlic to that spot and sizzle it for 30-45 seconds, until fragrant.
  5. Return the sliced sausage rounds to the skillet and add the crushed tomatoes. Season with salt and black pepper.
  6. Reduce the heat to medium-low and let the mixture simmer for 5-7 minutes until the sauce thickens.
  7. Remove the skillet from heat, taste to adjust the seasoning if needed, and garnish with fresh chopped parsley. Serve hot.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3-4 days. This dish can be frozen for up to 3 months.
