A comforting dish packed with cubed bread, creamy cheese, and fresh vegetables, perfect for brunch or busy mornings.

  • 6 cups of cubed bread (preferably stale)
  • 4 large eggs
  • 2 cups of milk
  • 1 cup of shredded cheese (cheddar or your preference)
  • 1/2 cup of cooked and crumbled sausage or bacon
  • 1/2 cup of diced vegetables (like bell peppers or spinach)
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried herbs (like thyme or oregano)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. Whisk together the eggs, milk, salt, pepper, garlic powder, and herbs in a large bowl.
  3. Add the cubed bread, shredded cheese, cooked sausage or bacon, and diced vegetables to the egg mixture. Stir gently until well mixed.
  4. Pour the mixture into the greased baking dish, spreading it out evenly.
  5. Bake in the preheated oven for about 40-45 minutes, or until golden brown and set.
  6. Let the bread pudding cool for a few minutes before slicing. Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. This dish can be prepped the night before and baked in the morning.
