A vibrant and simplified version of traditional chicken fajitas, packed with flavors and easy to prepare on a sheet pan.

Ingredients

  • 1 lb chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Flour or corn tortillas for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss together sliced chicken, red and green bell peppers, yellow onion, olive oil, chili powder, paprika, cumin, salt, and pepper.
  3. Spread the mixture on a sheet pan evenly.
  4. Bake for 20-25 minutes until the chicken is cooked through and vegetables are tender.
  5. Serve the fajita mixture with warm tortillas.

Notes

For an extra flavor boost, marinate the chicken and veggies for 30 minutes before roasting.
