Delicious and convenient breakfast sandwiches made with fluffy, cheesy egg squares, perfect for feeding a crowd or meal prepping.

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • Salt and pepper to taste
  • 8 slices of bread
  • Butter or oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the eggs, milk, salt, and pepper until fully combined.
  3. Stir in the cheese, bell peppers, and onions.
  4. Grease a sheet pan with butter or oil.
  5. Pour the egg mixture into the sheet pan and spread evenly.
  6. Bake for 20-25 minutes or until the eggs are set.
  7. Cut the baked egg into squares.
  8. Assemble the sandwiches by placing an egg square between two slices of bread.
  9. Toast the sandwiches on a skillet until golden brown, if desired.
