Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine the gnocchi, halved cherry tomatoes, sliced bell pepper, and zucchini on a large sheet pan.
  3. Drizzle with olive oil and season with salt, pepper, garlic powder, and Italian seasoning.
  4. Toss everything together to ensure even coating.
  5. Roast for 20-25 minutes until vegetables are tender and gnocchi are golden brown.
  6. Garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
