Sheet Pan Quesadillas

Perfectly crisp on the outside, filled with seasoned chicken, vibrant peppers, and loads of melted cheese, these quesadillas are ideal for a weeknight meal or gathering with friends.

Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup cooked chicken (shredded or diced)
  • 1 cup bell peppers (sliced)
  • 1/2 cup onions (sliced)
  • 1 teaspoon taco seasoning (optional)
  • Sour cream, salsa, or guacamole for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Lay down two tortillas as your base on the baking sheet.
  3. Sprinkle half of the cheese evenly over the first tortilla.
  4. Layer the cooked chicken, bell peppers, onions, and taco seasoning (if using) on top of the cheese.
  5. Sprinkle the remaining cheese over the toppings, then place the second tortilla on top.
  6. Bake in the preheated oven for about 15-20 minutes, or until the tortillas are golden and the cheese is melted.
  7. Remove from the oven and let cool slightly before slicing into wedges.
  8. Serve with sour cream, salsa, or guacamole.

Notes

For extra flavor, marinate your chicken with lime juice and spices before cooking. Feel free to experiment with fillings.
