A comforting cake layered with creamy vanilla pudding and topped with a crunchy crumble, perfect for any gathering.

Ingredients

  • 250g unsalted butter
  • 200g granulated sugar
  • 4 eggs
  • 400g all-purpose flour
  • 1 packet of baking powder
  • A pinch of salt
  • 500ml milk
  • 100g sugar
  • 40g cornstarch
  • 1 teaspoon vanilla extract
  • 200g all-purpose flour (for crumble)
  • 100g sugar (for crumble)
  • 100g cold, diced butter (for crumble)
  • 1 teaspoon ground cinnamon (optional)

Instructions

  1. Prepare the Baking Sheet by preheating your oven to 180°C (350°F) and lining a baking sheet with parchment paper.
  2. Make the Cake Batter by creaming together 250g of unsalted butter and 200g of granulated sugar until light and fluffy, then adding 4 eggs, mixing in 400g of all-purpose flour, 1 packet of baking powder, and a pinch of salt. Spread the batter evenly.
  3. Prepare the Vanilla Pudding by warming 500ml of milk with 100g of sugar, creating a paste with 40g of cornstarch, and whisking it into the warm milk until thickened. Stir in 1 teaspoon of vanilla extract, spreading it over the cake batter.
  4. Make the Crumble Topping by combining 200g of all-purpose flour, 100g of sugar, and 100g of cold diced butter until crumbly. Optionally add a teaspoon of ground cinnamon and sprinkle over the pudding layer.
  5. Bake in the preheated oven for 35-40 minutes or until golden brown and set.
  6. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before cutting into squares.

Notes

Serve with vanilla ice cream or fresh berries for added enjoyment.
