A quick and flavorful shrimp pasta dish with cherry tomatoes and garlic, perfect for any evening.

Ingredients

  • 8 ounces pasta (spaghetti or linguine)
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  1. Boil the pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes; cook for about 1 minute until fragrant.
  4. Cook the shrimp until pink and opaque, about 2-3 minutes.
  5. Stir in cherry tomatoes and chicken broth; simmer for 2-3 minutes.
  6. Toss the cooked pasta into the skillet with the shrimp mixture; mix well.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley and Parmesan cheese if desired.

Notes

Make sure to not overcook the shrimp for the best texture. Feel free to add other veggies like spinach or zucchini.
