A refreshing salad combining juicy watermelon, crisp cucumber, and tangy feta cheese, perfect for summer picnics or barbecues.

  • 6 cups watermelon (seeded and cubed)
  • 1 English cucumber (chopped)
  • 6 oz feta cheese (cubed)
  • Handful of chopped fresh mint leaves
  • 1 fresh lime (zest and juice)
  • Sea salt flakes and fresh ground black pepper (to taste)

Instructions

  1. Add your cubed watermelon into a large serving bowl.
  2. Chop the English cucumber into bite-sized pieces and add to the bowl with the watermelon.
  3. Cube the feta cheese and gently add it to the salad mix.
  4. Toss in a handful of freshly chopped mint leaves for that aromatic flair.
  5. Zest the lime, then juice it right into the bowl, enhancing the flavors with its zesty brightness.
  6. Sprinkle sea salt flakes and freshly ground black pepper to taste. Be cautious with the salt; feta can be salty, so adjust as needed.
  7. Very gently toss all the ingredients together. You want everything beautifully mixed without smashing the delicate watermelon and feta.
  8. Taste the salad and adjust any seasonings as desired.
  9. Serve immediately and enjoy each crunchy, sweet, and tangy bite.

Notes

Use ripe watermelon for the best flavor. Fresh mint can be substituted with basil.
