A comforting and easy-to-make Slow Cooker Chicken Posole Verde filled with tender chicken, hominy, and vibrant flavors of salsa verde.

Ingredients

  • 2 lbs boneless, skinless chicken breasts (about 34 breasts)
  • 1 medium white onion (diced)
  • 4 cloves garlic (minced)
  • 16 oz salsa verde
  • 4 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano (preferably Mexican oregano)
  • 25 oz canned hominy (drained and rinsed)
  • Shredded cabbage or lettuce (for topping)
  • Sliced radishes (for topping)
  • Diced avocado (for topping)
  • Fresh cilantro (chopped, for topping)
  • Lime wedges (for serving)

Instructions

  1. Place the chicken breasts in the bottom of a slow cooker.
  2. Top them with the diced onion and minced garlic.
  3. Pour the salsa verde and chicken broth over the chicken.
  4. Sprinkle the cumin and oregano on top.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  6. Remove the chicken and shred it using two forks.
  7. Return the shredded chicken to the pot and stir in the hominy.
  8. Cover and cook on HIGH for an additional 30 minutes.
  9. Taste and adjust the seasoning before serving hot with toppings.

Notes

For best results, use low-sodium broth. Feel free to customize with your favorite salsas or toppings.
