  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 5 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare Ingredients: Pat chicken breasts dry. Wash and halve baby potatoes, ensuring uniform size.
  2. Make Garlic Parmesan Seasoning: In a medium bowl, combine olive oil, minced garlic, dried Italian seasoning, salt, and black pepper. Stir well to form a fragrant paste.
  3. Assemble in Slow Cooker: Lightly grease the slow cooker. Arrange the halved potatoes evenly on the bottom. Place chicken breasts over the potatoes.
  4. Add Seasoning and Cheese: Evenly pour the garlic-oil seasoning mixture over the chicken and potatoes. Sprinkle the 1/2 cup grated Parmesan cheese over everything.
  5. Slow Cook: Cover tightly and cook on the LOW setting for 6-8 hours, or on HIGH for 3-4 hours, until the chicken is tender and easily shredded, and the potatoes are fork-tender. Avoid lifting the lid frequently during cooking.
  6. Finish and Serve: Once cooked, gently stir the dish, shredding the chicken directly in the pot if desired. Garnish generously with fresh chopped parsley. Serve hot, offering extra grated Parmesan cheese and fresh black pepper at the table for individual preference.
