Slow Cooker Greek Chicken

A delicious and nutritious slow-cooked chicken dish infused with Greek flavors, perfect for family meals or meal prep.

Ingredients

  • 1 cup plain Greek yogurt (whole, 2%, or lowfat)
  • 24 cloves garlic (minced or finely grated)
  • 2 teaspoons fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons kosher salt (divided)
  • 2 pounds boneless skinless chicken breasts or thighs

Instructions

  1. Whisk together the Greek yogurt, minced garlic, lemon zest, lemon juice, and 1 teaspoon of kosher salt until smooth and well-combined.
  2. Sprinkle the remaining 1/2 teaspoon of kosher salt evenly over the chicken breasts or thighs.
  3. Place the chicken in the bottom of the slow cooker and pour the yogurt mixture over it, making sure it’s well-coated.
  4. Cover the slow cooker and set it to low for 6-8 hours.
  5. Once the cooking time is up, remove the chicken and shred it, then return it to the pot and stir into the remaining sauce.

Notes

For thicker sauce, use whole Greek yogurt. Add fresh herbs for extra flavor.
