A simple and flavorful slow cooker recipe that combines tender beef with vibrant bell peppers and onions in a savory sauce.

  • 2 lbs beef sirloin or flank steak (sliced thinly against the grain)
  • 2 bell peppers (1 red, 1 green, sliced)
  • 1 large onion (sliced)
  • 4 cloves garlic (minced)
  • 1 tbsp fresh ginger (minced)
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup beef broth
  • 2 tbsp honey
  • 1 tsp sesame oil
  • 2 tbsp cornstarch (mixed with 2 tbsp cold water)

Instructions

  1. Whisk together the soy sauce, beef broth, honey, sesame oil, minced garlic, and minced ginger in the bottom of a 6-quart slow cooker until well blended.
  2. Add the thinly sliced beef to the slow cooker, tossing to ensure it’s fully coated with the savory sauce.
  3. Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours, allowing the beef to become tender and soak up delicious flavors.
  4. Add the sliced bell peppers and onion to the slow cooker about 30-45 minutes before the cooking time is up; stir gently to combine.
  5. Make a slurry by whisking the cornstarch and cold water in a small bowl until smooth, then pour it into the slow cooker and stir.
  6. Serve the pepper steak immediately over hot cooked rice.

Notes

Serve with steamed broccoli or a fresh garden salad for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 3 days.
