A comforting and flavorful slow cooker dish featuring tender chicken, zesty salsa, and hearty beans—perfect for busy weeknight dinners.

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Place the chicken breasts at the bottom of your slow cooker.
  2. Mix together the salsa and taco seasoning in a separate bowl.
  3. Pour the salsa mixture over the chicken breasts.
  4. Add the black beans and corn on top.
  5. Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours.
  6. Use two forks to shred the chicken in the slow cooker.
  7. Sprinkle the shredded cheese on top and allow it to melt for about 10-15 minutes.
  8. Serve with fresh cilantro, if desired.

Notes

Consider using rotisserie chicken for quicker meal prep. Store leftovers in an airtight container for up to 4 days.
