Loaded Smothered Beef Burritos

Comforting and hearty burritos filled with seasoned ground beef, creamy refried beans, and rice, topped with enchilada sauce and melted cheese.

Ingredients

  • 1 pound ground beef
  • 1 can refried beans
  • 2 cups cooked rice
  • 1 can enchilada sauce
  • 2 cups shredded cheese
  • Flour tortillas
  • Sour cream (optional)
  • Chopped green onions (optional)

Instructions

  1. Brown the beef in a large skillet over medium heat until browned. Drain excess fat.
  2. Combine the refried beans and cooked rice to the skillet with the ground beef, stirring to combine.
  3. Mix in some enchilada sauce and half of the shredded cheese, mixing well until heated through.
  4. Warm the flour tortillas in another pan or microwave to make them pliable.
  5. Assemble the burritos by spooning the beef mixture into the center of each tortilla, rolling it up, and placing it seam-side down in a baking dish.
  6. Add the remaining enchilada sauce over the assembled burritos and top with the remaining cheese.
  7. Bake in a preheated oven at 350°F (175°C) for about 20 minutes, or until the cheese is melted and bubbly.
  8. Serve the burritos hot, garnished with sour cream and chopped green onions if desired.

Notes

Customize your fillings with extra veggies or different meats as desired. Leftovers can be stored in the refrigerator for up to 3 days.
