Delicious soft caramel clusters with crunchy pecans, perfect for any gathering.

Ingredients

  • 1 cup pecans, chopped
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine ingredients in a medium saucepan, sugar, butter, and heavy cream over medium heat. Stir until it boils.
  2. Reduce heat and let simmer for about 5-7 minutes until thickened.
  3. Remove from heat and stir in vanilla extract and salt.
  4. Add in the chopped pecans and mix well.
  5. Drop spoonfuls of the caramel mixture onto a parchment-lined baking sheet.
  6. Allow to cool completely until set.

Notes

Store in an airtight container for up to one week. For longer storage, refrigerate but note that the caramel may firm up.
