Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven and prepare baking sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk together dry ingredients: In a mixing bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.
  3. Cream butter and brown sugar: In another bowl, cream the softened butter and brown sugar together until light and fluffy.
  4. Mix in molasses, egg, and vanilla: Beat in the molasses, egg, and vanilla extract until fully combined.
  5. Combine wet and dry mixtures: Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.
  6. Portion and roll dough: Portion out the dough and roll each ball into granulated sugar. Place them on the prepared baking sheet.
  7. Bake the cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are set but centers remain soft.
  8. Cool slightly on baking sheet: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
  9. Store for later enjoyment: These cookies can be stored in an airtight container for up to one week.
  10. Optional garnish for a twist: Consider garnishing the cookies with a sprinkle of coarse sea salt before baking.

Notes

For best results, use room temperature butter and avoid overmixing the dough.
