Delightfully soft and chewy bars with sweet white chocolate and tangy cranberries, perfect for the autumn season.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 cup white chocolate chips
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1/4 cup heavy cream
  • 1/2 cup white chocolate, melted (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs and vanilla until well blended.
  4. Mix together the flour, baking powder, and salt in another bowl. Gradually incorporate into the creamed mixture.
  5. Fold in the dried cranberries and white chocolate chips.
  6. Spread the batter evenly into the prepared baking dish.
  7. Bake for 20-25 minutes, until a toothpick comes out clean. Let it cool in the pan.
  8. Beat the cream cheese until smooth, then gradually mix in the powdered sugar and heavy cream.
  9. Spread the cream cheese frosting over the cooled bars.
  10. Drizzle the melted white chocolate over the frosting.
  11. Cut into squares and serve with coffee or tea.

Notes

Store in an airtight container in the refrigerator for up to a week. For longer storage, wrap and freeze for up to 3 months.
