  • 2 cups all-purpose flour
  • 1/2 cup sourdough starter
  • 1/2 cup warm water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Combine the flour, sourdough starter, warm water, sugar, and salt in a large bowl. Mix until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  3. Place the dough in a greased bowl, cover it, and let it rise overnight (or for at least 8 hours).
  4. Preheat your oven to 375°F (190°C) in the morning.
  5. Punch down the dough and divide it into small pieces. Roll each piece into a rope and tie it into a knot.
  6. Place the knots on a baking sheet lined with parchment paper.
  7. Mix the olive oil, minced garlic, and oregano in a small bowl. Brush the mixture over the knots.
  8. Sprinkle with Parmesan cheese if desired.
  9. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  10. Allow to cool slightly before serving.
