  • 1/2 cup Mayonnaise (Good quality, full-fat recommended)
  • 12 Chipotle Peppers in Adobo Sauce (Minced, plus 1 tsp of the sauce)
  • 1 tbsp Lime Juice (Freshly squeezed)
  • 1 clove Garlic (Minced)
  • 4 Large Eggs
  • 2 Brioche Buns (Sliced in half)
  • 2 slices Pepper Jack Cheese
  • 1 Avocado (Sliced or mashed)
  • 1 cup Arugula
  • 1 tbsp Butter (For toasting and cooking)

Instructions

  1. Prepare the Chipotle Aioli by combining mayonnaise, minced chipotle pepper, adobo sauce, lime juice, and minced garlic in a small bowl. Stir until smooth.
  2. Toast the buns by melting butter in a skillet over medium heat. Place the buns cut-side down and toast for 1-2 minutes.
  3. Cook the eggs in the same skillet, adding more butter or oil if needed. Cook to your desired doneness, topping with Pepper Jack cheese in the last minute.
  4. Assemble the sandwiches by spreading chipotle aioli on the toasted buns, layering arugula, cheesy egg, and avocado slices before topping with the other bun.

Notes

For a different twist, add sautéed onions or change the cheese to cheddar or mozzarella. Avocado can be sprinkled with lime juice to prevent browning.
