  • 1 cup white rice
  • 1 pound large shrimp, deveined and peeled
  • 1/4 cup mayonnaise
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Lime wedges

Instructions

  1. Rinse the rice thoroughly in a fine-mesh strainer under cold water.
  2. Simmer the rice with 2 cups of water in a medium saucepan. Bring to a boil over high heat.
  3. Reduce the heat to low, cover, and let it simmer for about 18-20 minutes or until the rice is tender and fluffy.
  4. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and set aside.
  5. Prepare the spicy mayo by mixing mayonnaise, Sriracha, soy sauce, sesame oil, garlic powder, paprika, salt, and pepper in a small bowl until well combined.
  6. Heat a large skillet over medium-high heat and add the shrimp. Cook for about 2-3 minutes on each side or until pink and opaque.
  7. Remove the shrimp from the skillet and let them rest while you assemble your bowls.
  8. Divide the cooked rice among serving bowls and top each with shrimp.
  9. Drizzle the spicy mayo over the shrimp and rice. Garnish with chopped green onions and sesame seeds, and serve with lime wedges.
  10. Serve immediately and enjoy!

For extra flavor, adjust the spiciness of the mayo to your liking and consider adding lime juice or honey for variation.
