A heartwarming Spicy Shrimp Soup that combines shrimp, savory broth, and a kick from jalapeños, perfect for chilly evenings.

  • 1 lb shrimp, peeled and deveined
  • 4 cups chicken or seafood broth
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 12 jalapeños, chopped (depending on your heat preference)
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Add the diced onions and minced garlic to the pot. Sauté until softened and fragrant.
  3. Stir in the chopped jalapeños and diced bell pepper. Cook for an additional 3-4 minutes.
  4. Pour in the broth along with the cumin, paprika, salt, and pepper. Stir and bring to a gentle simmer.
  5. Add the shrimp to the bubbling broth and cook until they turn pink, about 5 minutes.
  6. Taste your soup and adjust the seasoning as needed.
  7. Ladle the soup into bowls and garnish with fresh cilantro and lime wedges.

Notes

For a creamier soup, add a splash of coconut milk towards the end of cooking.
