A simple yet elegant dish that beautifully combines fresh spinach and creamy feta, perfect for breakfast, brunch, or a light dinner.

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in an oven-safe skillet over medium heat.
  3. Add the diced onion and sauté until translucent.
  4. Add the chopped spinach and cook until it wilts.
  5. Whisk together the eggs, milk, salt, and pepper in a bowl until well combined.
  6. Pour the egg mixture over the spinach and onion in the skillet.
  7. Sprinkle the crumbled feta cheese on top of the egg mixture.
  8. Cook on the stovetop for a few minutes until the edges start to set.
  9. Transfer the skillet to the oven and bake for 10-15 minutes, or until the frittata is set and golden.
  10. Slice the frittata and serve warm.
