A delightful medley of flavors featuring creamy feta cheese and fresh spinach, perfect for breakfast, brunch, or a light dinner.

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the diced onion in olive oil over medium heat until translucent.
  3. Wilt the chopped spinach in the skillet until it gently cooks down.
  4. Whisk together the eggs, milk, salt, and pepper in a large bowl.
  5. Combine the sautéed spinach and onion with the crumbled feta into the egg mixture.
  6. Start cooking the frittata by pouring the mixture back into the skillet, cooking until edges start to set.
  7. Bake in the oven for 15-20 minutes until golden and fully set.
  8. Cool slightly, slice, and serve warm.

Notes

For perfect results, don’t overcook the frittata; it should be set yet moist. Customize with different vegetables or cheeses as desired.
