A delightful dish featuring tender chicken breasts stuffed with a creamy filling of spinach and feta, perfect for an autumn dinner.

  • 4 chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C) to get it nice and hot.
  2. Mix together the chopped spinach, feta cheese, cream cheese, minced garlic, dried oregano, salt, and pepper in a bowl.
  3. Cut a pocket into each chicken breast with a sharp knife.
  4. Stuff each chicken breast with the spinach and feta mixture.
  5. Heat olive oil in a skillet over medium heat. Add the stuffed chicken breasts, browning them for about 3-4 minutes on each side.
  6. Transfer the browned chicken to a baking dish and bake for 20-25 minutes.
  7. Let the chicken rest for a few minutes before serving.
