Ingredients

  • 1 cup split peas
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 garlic clove, minced
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Rinse the split peas under cold water, removing any debris or broken pieces.
  2. Heat the olive oil in a large pot over medium heat.
  3. Sauté the chopped onion, minced garlic, carrots, and celery until softened, about 5 to 7 minutes.
  4. Combine the rinsed split peas with the vegetable broth in the pot.
  5. Season the soup with the bay leaf, along with salt and pepper to taste.
  6. Bring the mixture to a gentle boil, then reduce heat and let it simmer for about 45 minutes.
  7. Blend the soup with an immersion blender for a smooth texture, if desired.
  8. Final season the soup and serve warm with bread or crackers.
