Delightful Spring Funfetti Blondies filled with colorful sprinkles and white chocolate chips, perfect for any celebration.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 cup pastel spring sprinkles
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. Whisk together the flour, baking powder, and salt until combined. Set aside.
  3. Mix the cooled melted butter, granulated sugar, and brown sugar until smooth.
  4. Add the eggs one at a time, whisking after each addition, and stir in vanilla extract and lemon zest.
  5. Combine the dry ingredients into the wet mixture until just combined.
  6. Fold in the pastel spring sprinkles and white chocolate chips gently.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 18 to 22 minutes or until the edges are golden.
  9. Cool completely in the pan before lifting out and cutting into squares.

Notes

For an extra treat, add more chocolate chips on top before baking. Store in an airtight container for up to 4 days or freeze for 3 months.
