Classic Ribeye Steak Dinner

A delicious steak dinner featuring perfectly seasoned ribeye steaks, creamy garlic mashed potatoes, and vibrant green beans.

Ingredients

  • 2 ribeye steaks (about 1 inch thick)
  • Salt and black pepper
  • 2 tablespoons olive oil
  • 3 cloves of garlic, crushed
  • 2 sprigs of fresh rosemary
  • 1 cup of green beans, trimmed
  • 2 medium potatoes, peeled and cut into quarters
  • 2 tablespoons butter
  • 1 teaspoon paprika

Instructions

  1. Start by taking the steaks out of the refrigerator about 30 minutes before cooking to allow them to reach room temperature.
  2. Meanwhile, fill a saucepan with water and bring it to a boil. Add the quartered potatoes and cook for about 15-20 minutes until fork-tender. Drain and return them to the pot.
  3. In another pan, bring some water to a boil and add the trimmed green beans. Blanch them for 3-4 minutes until bright green and tender-crisp. Drain and set aside.
  4. Heat a cast-iron skillet or heavy frying pan over medium-high heat. Add the olive oil and let it heat until shimmering, but not smoking.
  5. Once the skillet is ready, add the steaks. Sear for about 4-5 minutes on one side until a beautiful crust forms.
  6. Flip the steaks, add the crushed garlic and rosemary into the pan, and cook for another 4-5 minutes for medium-rare.
  7. As the steaks finish, add butter and paprika to the drained potatoes in the pot. Mash with a fork until creamy, adjusting seasoning as needed.
  8. Return the green beans to the pan briefly to combine with the leftover flavor from the steaks and to reheat. Season with salt and pepper.
  9. Remove the steaks from the skillet and let them rest for 5 minutes.
  10. Slice the steaks against the grain and serve alongside the creamy mashed potatoes and vibrant green beans.

Notes

Pair the steak dinner with a glass of red wine or refreshing sparkling water with citrus. Store leftovers in an airtight container for up to 3 days.
