Deliciously simple steak fajitas featuring marinated flank steak, sautéed vegetables, and warm tortillas, perfect for gatherings.

  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 8 flour tortillas
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Begin by combining olive oil, lime juice, chili powder, cumin, salt, and pepper in a bowl. Pour this marinade over the flank steak, coating it thoroughly. Let it sit for at least 30 minutes.
  2. Preheat your grill or skillet over high heat. Once hot, carefully place the marinated steak on the grill. Cook for about 5-7 minutes on each side.
  3. Remove the steak from the heat and let it rest for a few minutes.
  4. Add sliced bell pepper and onion to the same skillet and sauté over medium heat for 5-7 minutes.
  5. Slice the rested steak thinly against the grain.
  6. Layer the steak and sautéed vegetables onto warm tortillas and garnish with fresh cilantro.

Notes

For deeper flavor, marinate the steak overnight. Don’t skip the resting period after grilling for juicy meat.
