A delightful no-bake Strawberry Cheesecake Icebox Cake that combines traditional cheesecake flavors with effortless layering for a refreshing summer dessert.

Ingredients

  • 1 package of graham crackers
  • 2 cups heavy cream
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced

Instructions

  1. Beat the heavy cream, cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Layer graham crackers on the bottom of a 9×13 inch dish.
  3. Spread a layer of the cheesecake filling over the graham crackers.
  4. Add a layer of sliced strawberries on top.
  5. Repeat the layers until all your ingredients are used, finishing with a layer of cheesecake filling on top.
  6. Chill in the refrigerator for at least 4 hours or overnight.
  7. Serve chilled, garnished with additional strawberries if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will remain vibrant.
