A delightful Strawberry Cream Cake featuring layers of fluffy cake, fresh strawberries, and whipped cream, perfect for celebrations and summer gatherings.

  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups fresh strawberries, sliced
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream the softened butter and granulated sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Combine the all-purpose flour, baking powder, and salt in another bowl.
  5. Mix the dry ingredients into the butter mixture, alternating with the milk, until smooth.
  6. Divide the batter between the prepared pans and bake for 25-30 minutes.
  7. Cool the cakes in the pans for about 10 minutes, then turn onto wire racks.
  8. Whip the heavy cream with the powdered sugar until stiff peaks form.
  9. Assemble the cake by layering one cake on a platter, topping with whipped cream and sliced strawberries.
  10. Frost the second layer with the remaining whipped cream.
  11. Decorate with additional sliced strawberries on top.
  12. Slice and serve to enjoy this luscious treat.
