Delicious muffins filled with sweet strawberries and creamy cheese, perfect for breakfast or a snack.

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, combine the melted butter, milk, egg, and vanilla extract. Stir these together until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are perfectly fine!
  5. Gently fold in the chopped strawberries, allowing their natural sweetness to blend throughout the batter.
  6. In a separate bowl, beat the cream cheese and powdered sugar until smooth and creamy. This will be the luscious filling that elevates the muffins.
  7. Fill each muffin cup halfway with muffin batter, then add a dollop of the cream cheese mixture in the center. Top with a bit more muffin batter until each cup is about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the muffins to cool slightly before removing them from the tin. Enjoy them warm!

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freeze for up to two months.
