  • ½ cup unsalted butter, softened
  • 2 large eggs, room temperature
  • ¾ cup whole milk

  • 1 ½ cups fresh strawberries, hulled and chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon cornstarch
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 large egg, room temperature
  • ½ teaspoon vanilla extract

Instructions

  1. Macerate the strawberries by tossing them with granulated sugar and cornstarch; set aside.
  2. Preheat your oven to 350°F (175°C).
  3. Combine the flour, baking powder, and salt in a large bowl.
  4. Cream the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, then mix in the milk and vanilla extract.
  6. Incorporate the flour mixture into the wet ingredients until just combined.
  7. Fold in the macerated strawberries and their juices.
  8. Prepare the cream cheese swirl by mixing cream cheese with powdered sugar, egg, and vanilla until smooth.
  9. Assemble the cake by pouring half of the strawberry batter into a greased pan, dolloping cream cheese mixture, and swirling.
  10. Bake for 45-50 minutes until a toothpick comes out clean.
  11. Cool the cake for 30 minutes before slicing.
