A delightful dessert featuring fresh strawberries, fluffy whipped cream, and buttery shortcakes, perfect for summer gatherings.

  • 2 cups strawberries, sliced
  • 1/4 cup sugar
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup milk

Instructions

  1. Combine the sliced strawberries and sugar. Let them sit for 30 minutes to release their juices.
  2. Preheat the oven to 425°F (220°C).
  3. Mix the flour, baking powder, and salt in another bowl. Cut in the butter until the mixture looks like coarse crumbs. Stir in the milk until just combined.
  4. Drop the dough onto a floured surface and pat it into a 1-inch thick round. Cut into 8 circles and place them on a baking sheet.
  5. Bake for 12-15 minutes until golden brown.
  6. Whip the cream with the powdered sugar and vanilla until soft peaks form while the cakes are baking.
  7. Slice the cooled shortcakes in half.
  8. Layer strawberries and whipped cream in between the halves and on top. Serve immediately.
